Gluten-Free Chocolate Chip Cookies

I get territorial when it comes to my favorite recipes, but I decided to share this one! After experimenting with various ingredients, this was my final concoction. Many recipes call for way too much sugar, so I almost always cut it down quite a bit. I know gluten-free baking can be challenging, so I hope you enjoy these cookies as much as I do.

Ingredients: (makes 18-24)

1 stick salted butter softened (I love Kirkland grass-fed butter)

1/3 cup granulated sugar

1/3 cup brown sugar

1 tsp vanilla extract

2 large eggs

1 ¼ cup of gluten-free flour (King Arthur or Namaste with xanthan gum)

½ cup certified GF oat flour (I put One Degree Organic Foods oats in the food processor and made my own)

½ tsp baking soda

1 cup chocolate chips (I like Enjoy Life)

Specifications:

*Beat softened butter and both types of sugar on medium speed until well blended.

*Add vanilla and eggs.

*In a small bowl, mix GF flour, oat flour, and baking soda.

*Gradually add the dry ingredients to the butter and sugar and combine.

*Fold in the chocolate chips gently.

*Place cookie dough in the refrigerator for 1 hour.

*Preheat oven to 375 degrees Fahrenheit.

*Line a baking sheet with parchment paper.

*Drop cookie dough onto parchment paper with a spoon and bake for approximately 10 minutes. This will vary depending on your oven (my 2nd batch baked a little quicker than the first.) The cookies should be golden brown.

*Let cookies cool and move them to a wire rack.

*Place cookies in an airtight container once they are completely cooled.

As mentioned above, baking your own recipes is a great way to control the amount of sugar. After cutting the sugar in half, these cookies still taste great! Let me know how they turn out!
