Chocolate Peanut Butter Clusters

Just because you follow a healthy nutrition plan doesn’t mean that you can’t enjoy dessert. Keep the sugar low and use real ingredients. These have only 3 ingredients but are amazing when you are short on time. Simple recipes like this allow you to save money instead of buying store bought desserts which often have unhealthy additives and less nutritional value. See the notes following the recipe for alternative ingredients.

 

Ingredients: (makes 12 clusters)

½ c chocolate chips (I use Enjoy Life brand)

¼ c peanut butter (Kirkland natural)

2 thin lightly salted brown rice cakes (Lundberg)

 

Method:

*melt chocolate in the microwave or double boiler on the stove

*stir in peanut butter

*add chopped rice cakes

*stir until all ingredients are incorporated

*drop each spoonful on a cookie sheet lined with parchment paper

*place in freezer for 30 minutes

*add clusters to a sealed container (use parchment paper if layering)

 

Notes:

Feel free to change the ingredients and make it your own recipe, but stick to nutritious additions (avoid candy, marshmallows etc.) Substitute any of the nut butters. You can also add peanuts, nuts, and raisins. Double or triple the recipe if you need to serve a large group. Drop a comment and let me know how they turned out!
