My boys were both diagnosed with Celiac in 2023, so I’ve been experimenting with gluten-free ingredients. These turned out much better than I imagined and they’re gluten-free, dairy-free, and egg-free. I didn’t notice the chickpea flavor or texture at all. I tried them warm and room temperature and approved of both. The chopped peanuts give it a really nice texture.
Ingredients: (makes 12 blondies)
1 15-ounce can of chickpeas
½ cup of brown sugar
½ cup natural peanut butter (creamy)
¼ cup gluten-free flour (I used Namaste)
2 tsp. vanilla extract
½ tsp. baking powder
1/3 cup chocolate chips (I love Enjoy Life)
1/3 cup chopped peanuts
A few pinches of salt
Method:
Preheat oven to 350 degrees
Line an 8×8 square baking dish with parchment paper
Drain and rinse chickpeas and place in the food processor (add a little water to help blend)
Add blended chickpeas to a mixing bowl
Incorporate brown sugar, peanut butter, gluten-free flour, vanilla extract, and baking powder
Blend the ingredients with a whisk and add chocolate chips
Include the chopped peanuts (I used the food processor)
Spread into the pan (batter is thick)
Sprinkle a little salt on top (salt flakes work well)
Bake for 40 minutes until top is firm and starting to brown (ovens vary)
These blondies would pair well with a scoop of vanilla ice cream or a dollop of whipped cream. I didn’t have salt flakes, but they would add a nice touch. The photograph doesn’t do it justice!
