Gluten-Free Pumpkin Doughnuts

I am obsessed with anything pumpkin! I love how these are easy to make with simple ingredients. I used a silicone mini doughnut pan that held a dozen. I am shopping around for a different pan though. They were a little time-consuming filling and removing so I’m hoping there are better options out there. Comment below if you know of a good doughnut pan!

 

Ingredients: (makes 3 dozen mini donuts)

Spray stick (I use Chosen Foods avocado oil)

1 can pumpkin (15 oz)

½ cup brown sugar

½ cup milk

1 egg

1 tbsp avocado oil

1 tsp vanilla extract

1 cup gluten-free flour

1 tsp baking soda

½ tsp baking powder

½ tsp cinnamon

Confectioners’ sugar (optional)

 

Instructions:

*Preheat oven to 350 degrees F.

*In a large bowl, mix ingredients in the order from above

*Spray your pan with spray stick

*Use a teaspoon or pastry bag to pipe dough into the pan

*Bake for 20+ minutes or until toothpick comes clean

*Let cool and place doughnuts on a wire rack

*Sprinkle with confectioners’ sugar if desired

*Store in an airtight container for a few days
