Baked Bone-In Chicken Thighs

Normally I make boneless, skinless chicken thighs, but I bought the wrong ones. To my surprise, these were amazing. I altered the ingredients slightly, but this recipe is similar to my previous one. Also, instead of grilling them, I baked them in the oven.

Ingredients:

4 bone-in chicken thighs

3 Tbs olive oil

1 Tbs brown sugar

1 Tbs balsamic vinegar

1 Tbs Dijon mustard

1 Tbs soy sauce (I use gluten-free)

1 tsp paprika

1 tsp black pepper

1 Tbs fresh rosemary & parsley chopped (from my herb garden)

1 clove garlic

Instructions:

*combine all ingredients in a bowl and stir

*place chicken thighs in a Ziploc bag and pour in liquid

*massage until chicken is coated and refrigerate for at least an hour

*preheat oven to 400 degrees

*place chicken in an 8×8 pan (uncovered)

*bake for 40 minutes

* I paired mine with white rice seasoned with salt, pepper, garlic powder, onion powder, paprika, and butter. Enjoy!
