Baked Sweet Potatoes

I’ve been making these as a side dish often because they are loaded with nutrients. Sweet potatoes are rich in beta carotene and potassium. They are a good source of fiber, which is an important part of anyone’s nutrition plan. I like that they last 3+ weeks in the pantry if stored in a cool, dry place. It’s really difficult when produce spoils quickly and you end up wasting food and money.

This is the simplest recipe but give yourself at least 40 minutes to preheat the oven, prep and bake. I usually only bake two to four potatoes for dinner and don’t make extra for leftovers.

Ingredients:

Sweet potatoes

Olive oil

Salt

Pepper

Butter

Instructions:

*Line a baking sheet with parchment paper

*Drizzle olive oil, salt, and pepper on the parchment paper

*Cut sweet potatoes in half longways

*Lay the flat side down in the olive oil, salt, and pepper

*Bake for 30 minutes

*Top with butter
