Gluten-Free Banana Bread

My kids ate the whole loaf within 24 hours. I’m happy I’m finding ways to shift wheat recipes to gluten-free ones that actually taste great. If the kids eat it without reservation, then I know I’m on the right track. This recipe is similar to @tastesbetterfromscratch who is on Instagram. I made mine gluten-free and changed a few ingredients and measurements.

 

Ingredients:

1 ½ cups bananas (3 or 4 bananas)

1 egg

¼ cup applesauce

1 Tbsp vanilla

3 Tbsp brown sugar

1 Tbsp granulated sugar

1 tsp cinnamon

1 ½ cups gluten-free flour (I used King Arthur 1:1 measure)

1 tsp baking powder

1 tsp baking soda

½ tsp salt

2 Tbsp melted butter or avocado oil

 

Instructions:

*Preheat oven to 350 degrees.

*Mash 3-4 bananas in a large bowl.

*Add egg, applesauce, and vanilla.

*Include brown sugar, granulated sugar, and cinnamon and combine.

*In another bowl, incorporate flour, baking powder, baking soda, and salt.

*Mix flour mixture into the wet ingredients and stir.

*Add butter or oil and stir again.

*Grease a 9”x5” pan or use parchment paper.

*Add batter to pan and bake for 35-45 minutes, depending on your oven.

*Toothpick should come out clean.
