Gluten-Free Granola Bars

These are my go-to granola bars that taste better than most bars on the market. I love the texture and my kids eat them, which tells me a lot. They have simple ingredients and are easy to make. Some homemade baked goods are time consuming, but I can knock these out quickly.

I use certified gluten-free oats that aren’t over-processed or doused with glyphosate. You can experiment with variations such as nuts and raisins and create your own recipe. I almost always have these ingredients on hand, so I make them often.

Ingredients:

2 cups certified gluten-free oats (One Degree Organics brand)

1 Tbsp ground flax (optional)

1 tsp cinnamon

½ tsp salt

¼ cup nut butter (I use Kirkland’s natural peanut butter)

¼ cup honey (I’ve also used coconut sugar)

½ cup milk (rice milk)

1 tsp vanilla

Handful of chocolate chips

Instructions:

*Preheat oven to 350 degrees

*Spray an 8×8 glass pan with spray stick (Chosen Foods avocado oil)

*In a food processor, pulse oats until chopped and pour into medium sized bowl

*Add flax, cinnamon, and salt. Stir with a fork

*Include nut butter, honey, milk of your choice, and vanilla and stir

*Add a handful of chocolate chips and incorporate

*Spread into the greased pan and press down lightly with a fork

*Bake at 350 degrees for 18-20 minutes or lightly browned
