I make soup all year round and this is one of my favorites. It has minimal ingredients but is packed with tons of flavor and nutrients. The can of coconut makes it “creamy,” and the bacon adds a perfect amount of “savory. “
The goal is to create a meal plan with recipes that consist of real ingredients that don’t take boat loads of time to make. Keep it simple and look around your pantry to include additional ingredients. Any recipe can be modified with seasonings or other elements. Experimenting will help you become a more versatile cook.
Savory Coconut Beef, & Potato Soup
5 slices of thick bacon (may substitute pancetta or 2 links of Italian sausage)
1 small onion
2 carrots
1 lb ground beef (may use ground chicken or turkey)
32 oz beef bone broth
1 15 ounce can full fat, unsweetened organic coconut milk
3 medium potatoes with skin on (I prefer Yukon gold. You can also use sweet potatoes)
1 medium zucchini
2 tsp fresh parsley
2 tsp salt
Beef bouillon (optional)
Directions:
*Cut up bacon and add to a large pot. Cook on medium heat for about 5 minutes.
*Add chopped onion and carrot and cook for another 5 minutes.
*Add ground beef. Stir periodically and cook completely.
*Pour in beef bone broth and coconut milk.
*Include chopped potatoes and zucchini.
*Bring to a light boil and continue cooking for 30-40 minutes with lid cracked.
*Add more broth if necessary (or water with beef bouillon.)
*Season with salt and pepper.
*If you use ground turkey or chicken then switch to chicken bone broth.
