Lemon Vinaigrette

I’m not a fan of most of the storebought dressings that are on the grocery store shelves these days. They usually have some weird flavor or consistency that I don’t enjoy. Many of them also have preservatives to maintain their shelf life, which is something I try to avoid.

I’m making an effort to eat “real” food that’s not ultra-processed, so homemade dressings and condiments are a pretty simple place to start. Storebought tends to be pricey, and I finally realized that it only takes a few minutes and ingredients to make dressing from scratch.

You’ll be glad you ventured into this area of cooking, because it tastes 1000% better! I’ve been pairing this lemon vinaigrette with Greek salads and have become somewhat addicted to eating them!

Ingredients: (makes about ½ cup of dressing)

¼ cup olive oil (quality, single source – I used Smash Kitchen)

1 T white vinegar

Juice from ½ lemon

1 T pure maple syrup

1 tsp Dijon mustard

½ clove of fresh garlic finely chopped

¼ tsp salt

Black pepper to taste

A shake of dried thyme

Instructions:

*Pour all ingredients in a small mason jar and shake.

*If you’re not going to use it immediately, then place it in the refrigerator for up to a week.

*Set out on the counter for 10+ minutes before using to bring it to room temperature.
