Even if you only have a few tomatoes, this is worth making. It tastes way better than any jarred salsa. The best recipes require minimal ingredients in my opinion!
Fresh ingredients are key and if you can buy organic, that’s even better. Sometimes raw onion is tough on the belly, so I didn’t include it in the recipe. Go for it if that’s something that piques your interest.
I have been making a point to make my own salad dressing and BBQ sauce also. It’s really not that difficult, especially if you meal plan and have all the ingredients on hand.
Ingredients:
4 medium tomatoes on the vine
2 T chopped cilantro
½ clove of garlic chopped
½ tsp salt
Pepper to taste
Instructions:
*cut up tomatoes and chop the cilantro and garlic
*place in a food processor
*add salt and pepper
*pulse until the desired consistency is achieved (I like my salsa thinner)
*pair with tortilla chips, tacos, burrito bowls, or enchiladas
*refrigerate until ready to use
*use within a few days for best results
I typically make just enough for a dinner or two and not much extra for leftovers. It tends to get pushed to the back of the fridge and get wasted.
